Covered casserole dish with lid

A Lid on the Casserole Keeps Weeknight Stew From Drying Out

An open pan dries stew at the edges while the middle is still thin. A casserole with a lid traps steam, so the liquid reduces evenly and you are not standing over the stove stirring every two minutes.

Pick a pot you can carry from burner to table. The lid should sit flat. If steam pours out the sides, the stew will still scorch.

Start with a lid on

Bring it to a simmer covered. Then crack the lid if you need it thicker. Salt at the end so it does not concentrate too soon.

Keep the table calm

One casserole. One ladle. A linen under the pot so the wood does not mark. If you want more kitchen pieces for the same table, start in the shop catalog.
